For me, watermelons can be a bit of a hassle, so I was really excited to discover mini seedless ones at Trader Joe’s last week. However, if you get stuck with a regular sized melon, just bear in mind you will have larger segments, which just means more room for dipping!

1 mini watermelon, preferably seedless (or half one large watermelon)
1c greek yogurt
10 kalamata olives, finely diced
2T kalamata olive juice
1/4c feta
1t freshly chopped parsley

Cut the watermelon in half lengthwise and then slice cross sections as pictured below. Remove all corner pieces that will render only rind and no fruit.

In a bowl combine all other ingredients. Arrange watermelon however you want alongside dip.

Ridiculously easy, right?
