I can never stress the importance of breakfast enough to my clients.  Besides the fact that food makes us happy and can boost our mood early on in the day, it actually sets the tone for your eating habits at subsequent meals.  When we eat more in the morning, we require less through out the day, when our body is less likelihood to burn it.

This recipe can be easily swapped out with any kind of potato, although I try to opt for the most nutrient dense option– sweets!  Traditionally I season the potatoes with just a little garlic, salt and pepper and top with a little arugula, but I decided to throw a little southwest flavor in today!  The purple sauerkraut I added to this recipe is cumin spiced and was purchased at the Union Square farmer’s market, by Hawthorne Valley Farms.  I encourage you to experiment with your own toppings (hopefully veggies), based on what you have available in the kitchen!

1 sweet potato
2 tablespoons olive oil
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon chili
1/2 teaspoon cumin
salt to taste
2 organic eggs
1/2 avocado
2 tablespoons cumin spiced sauerkraut (optional)

First wash and dry the sweet potato.  Cut it into slices no more than a quarter inch thick, discarding the ends.  For one individual skillet, only 12-15 slices will be needed.  Put a small 8-10 inch skillet on medium heat and add 1 tablespoon of oil.  Coat the slices of potato in the other tablespoon of oil and add spices, including salt.  Arrange the slices in the pan carefully so that they overlap (as if a stack of dominos had fallen) around the perimeter of the pan.  Place one individual slice in the center of the pan as well.  Cover the pan for approximately 3-5 minutes, allowing the potatoes to soften. (this is how it will appear from underneath the skillet)

Crack the 2 eggs and gently place them into the center of the pan.  If you are content eating sunny side up eggs, you can simply cover the pan and allow the eggs to cook for 2-3 minutes.  If you prefer the tops to be cooked and have an oven safe skillet, then you can place the eggs under the broiler for no more than one minute.  The potatoes will very easily slide out of the pan onto a dish, using a rubber spatula .  The eggs should be lightly seasoned with salt and black pepper if desired.  Top with sliced avocado and sauerkraut.
