The summer is officially over, but there are some zucchini that needs to be consumed once and for all. This is a very quick, easy and delicious snack that can almost satisfy your inner fat kid.

Feel free to add a tomato or pesto sauce for dipping, although I don’t think its needed!

2 large zucchini
1T extra virgin olive oil
1t garlic powder
1/2t dried oregano
1/2t chili pepper flakes
1T grated parmesan cheese
salt and pepper to taste

Preheat oven to 400 degrees. Line a baking sheet with parchment paper or foil. Cut the zucchini in slices no more than a quarter inch thick (using a mandoline is ideal). Lightly toss the slices in a bowl with the olive oil very carefully. Place the zucchini on the baking sheet. In a separate small bowl, evenly combine the garlic powder, oregano, chili, parmesan and salt and pepper (if needed). Sprinkle the combined ingredients evenly over the zucchini.

Bake in the oven for approximately 20-25 minutes or until golden brown.
