Over the last few weeks I have been recreating snack favorites for my clients.  For those of you that have a sweet tooth, this creation should be right up your alley!  As always, any nut or seed can be supplemented in place of the cashews if they’re not your thing.

  • 1 cup raw organic cashews
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut oil, melted
  • 1/2 cup shredded coconut
  • pinch sea salt
Set oven to 400 degrees.  Combine maple syrup and vanilla in a small bowl, add cashews and coat evenly. Strain out cashews and place on a parchment lined baking sheet.  Lightly drizzle coconut oil over the cashews and top with shredded coconut and sea salt.  Roast in the oven for 10 minutes, or until lightly golden brown.
